Gingerbread Cookies

1 C shortening
1 c sugar
1 egg
1 c molasses
2 tbs vinegar
5 C of flour
1 1/2 teaspoons soda
1 T. ginger
1 T Cinnamon
1 tsp cloves
1 Tbs vanilla
Cream sugar, shortening and eggs molasses's, granulated adding remaining ingredients the set in refrigerator roll out and cut about 1/2 inch thick. Bake 375 about 10 min or 12 min Good with icing

Sugar Cookie


This is a soft cake like recipe. I find that you really need something like sour cream, cream cheese or butter milk to make a soft sugar cookie.


Sugar Cookie
4 eggs
3 c sugar
1 c sour cream
1/2 c butter
7 c flour
1 t backing soda
6 t backing powder
2 t vanilla
pinch of salt
mix sugar and butter until light and fluffy. Mix in rest of ingredient's. Sit dough out for an hour. Roll out 1/4 inch on floured surface with a rolling pin. Cut in desired shapes, Bake 375 for 8 min. If the cookie is really small I adjust lower the time baked.

I don't always use this icing but its a good icing if you have to travel with the cookies

Traditionally Meringue Powder Royal Icing is made with egg whites. But I think this is a safer way since the egg whites are uncooked.

1/4 c meringue powder
1/2 c cold water
1 pound powdered sugar

Island Cookies


Island Cookies

Preheat oven at 375

1 2/3 Cup of all purpose Flour
¾ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¾ cup (1 ½ Sticks) butter or margarine, Softened
¾ cup packed brown sugar
1/3 cup granulated sugar
1 teaspoon Vanilla
1 large egg
1 ¾ cups of (I only use white with a few milk choclate chips) Milk chocolate chips, or Semi Sweet, or White, or Butterscotch
1 cup flaked coconut (Toasted if desired)
1 cup chopped walnuts
yeilds about 2 1/2 dozen

Combine flour, baking powder, baking soda and salt in a small bowl. Beat butter, brown sugar granulated sugar and vanilla extract in large mixer bowl until creamy. Beat egg. Gradually beat in flour mixture. Stir in morsels, coconut and nuts. Drop by rounded tablespoon onto ungreased baking sheets. Bake for 8 to 11 minutes.
I like it best with the toasted coconut. If you haven't ever toasted coconut before just put it in the oven on broil and watch it closely it will burn fast but stir every few seconds to get the it all toasted.

Grandma Massey's Pumkin Cookies


1/2 C Shortening
1 1/2 c brown sugar
2 eggs
1/2 t lemon juice
1 t Vailla
2 1/2 c flour
3/4 t soda
2 t baking powder
1/2 salt
1 t ginger
1 t cinammon
1 1/2 c pumkin
Chocolate Chips

Cream together shortening sugar and effs. Mix in pumkin, flour, baking powder, soda, salt, cinnamon and ginger. Add dry ingredients to shortening mixture. Add vanilla, chocolatae chips and Bake 12-15 min at 350

My Favorate Chocolate Chip Recipe


1 cube butter, 1 c granulated sugar, 1 c brown sugar, 2 eggs , 2 t vanilla, 2 c. flour, 3 c old fashion rolled oats, 1/2 t salt, 1 t baking powder, 1 t baking soda, 1 package milk chocolate chips, 1/2 t Cinnamon, 1/2 t lemon.

Cream butter, sugars, eggs and vanilla. Add flour, oats, salt, soda, baking power and chocolate chips.
Bake at 325 for 11 min. Makes about 3-4 dozen. Grandma Shirley
